Simply score your big sheet, cut in two, and then score the two pieces. If you need to cut a big sheet into two, this center scoring line also makes a perfect cutting line. I know it seems a bit odd to do that, but trust me you get a better edge on your base card that way. So once you finished scoring your paper in the middle, turn the paper over and fold it. Mountain side is the bump of your score line and valley side is the score line/groove you left. Now comes the surprising bit which actually left me a bit confused when I started crafting: You fold on the mountain side and not the valley. The score line/groove you create will weaken the paper fibres to allow you to fold the card stock neatly. You can score using an old pen that doesn't work anymore, the back of the scissors (careful), or a scoring/embossing tool (it looks like a pen but has a metal round tip which is perfect).
